Ingredients:
4 tablespoon(s) unsalted butter |
1/4 cup(s) all-purpose flour |
4 cup(s) turkey stock warm |
1 sprig(s) thyme |
4 piece(s) dried porcini mushrooms optional |
2 tablespoon(s) madeira optional |
1 tablespoon(s) kosher salt |
Directions:
1. Melt butter in saucepan over medium heat 2. Whisk in flour, cooking blond (cafe au lait color); 3=4 minutes 3. Gradually whisk in turkey stock 4. Bring to boil, lower heat to bare simmer 5. Add thyme (or 2 bay leaves), porcini, and madeira 6. Simmer until reduced in half 7. Remove herbs & mushroom 8. Season with salt |
