Found this in the West Hawaii Today newspaper back in Nov 2005. Sounds like it would be a nice way to use up some leftover turkey. And...you can freeze the turkey mixture until you're ready to make the sandwiches. Ingredients:
1 (8 3/4 ounce) can peaches, sliced |
1 cup cooked turkey, finely chopped |
1/4 cup celery, finely chopped |
2 tablespoons raisins, snipped |
1 (3 ounce) package cream cheese, softened |
1/2 teaspoon curry powder |
4 croissants, split |
1/4 cup peanuts, chopped |
lettuce leaf |
Directions:
1. Drain and chop peaches, reserving 2 tablespoon liquid. 2. In a medium mixing bowl, combine peaches, turkey, celery and raisins. 3. In a small mixing bowl, stir together cream cheese, curry powder and reserved peach liquid until smooth. 4. Pour over turkey mixture, tossing to coat. 5. Spoon mixture into a 2-cup freezer container and freeze if desired. 6. To serve, thaw turkey mixture overnight in refrigerator. 7. Spread mixture on 4 croissant bottoms and sprinkle with peanuts, then add lettuce. 8. Put on croissant tops and serve. |
