Ingredients:
1/4 cup(s) olive oil |
1 red onion (large) diced |
1 red pepper seeded and diced |
1 yellow pepper seeded and diced |
1 green pepper seeded and diced |
2 pound(s) ground turkey |
1 pound(s) hot italian turkey sausage meat removed from casings |
1/4 cup(s) chili powder |
1/4 cup(s) ground cumin |
3 can(s) diced tomatoes with liquid (28 oz) |
1 can(s) chili beans (15 oz) |
1 can(s) great northern beans (15 oz) drained and rinsed |
1 can(s) kidney beans (15 oz) drained and rinsed |
1 can(s) black beans (15 oz) drained and rinsed |
1 cup(s) dijon mustard |
1/2 bunch(es) cilantro chopped |
1/4 cup(s) fresh dilled chopped |
Directions:
1. In a large stockpot, heat olive oil over medium heat. Add onion, red pepper, yellow pepper and green pepper and saute until vegetables are tender, about 5 minutes. Add ground turkey and sausage and saute until cooked through about 10 minutes. Break meat into small chunks as it is cooking. Add chili powder and cumin and cook 5 minutes. Add tomatoes and simmer 10 minutes. Add beans. Reduce heat to low and cook 1 hour, stirring occasionally to prevent beans from sticking. Add mustard, cilantro and dill. Season to taste. Garnish as desired with sour cream, cheddar cheese, green onions, black olives, etc. |
