Chili made with lean ground turkey and red kidney beans Ingredients:
1 lb. lean ground turkey |
1 red pepper |
1/2 white onion |
3 cloves garlic |
2 tbsp tomato paste |
400 g red kidney beans |
1 tbsp olive oil |
1/2 tbsp chili powder |
1/8 tsp garlic powder |
1/8 tsp red pepper flakes |
1/8 tsp oregano |
1/4 tsp paprika |
3/4 tsp cumin |
1/2 tsp kosher or sea salt |
Directions:
1. Heat olive oil in bottom of pot. Add garlic and stir for 30 seconds. Add red pepper and onion, chopped. Cook until onion sweats. 2. Add 2 Tbsp. tomato paste and 1/4 water to vegetables. Add all the spices. Add ground turkey, not stirring too frequently to avoid breaking up the mince too finely. 3. Once turkey is mostly cooked, add one can of red kidney beans, drained and rinsed. Stir into chili and let cook for another 10 minutes or so with the lid off to allow excess water to boil off. |
