1 tablespoon vegetable oil |
1 onion, finely chopped |
3 garlic cloves, minced |
1 green bell pepper, cut in 1/2 inch squares |
1 red bell pepper, cut in 1/2 inch squares |
2 teaspoons chili powder |
3/4 teaspoon oregano |
3/4 teaspoon ground cumin |
3/4 teaspoon ground coriander |
1 lb ground turkey |
1 (14 ounce) can chopped tomatoes |
1 (8 ounce) can tomato sauce |
2 tablespoons tomato paste |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 (15 ounce) can red kidney beans, drained and rinsed |
Directions:
1. In a flameproof casserole, heat the oil over moderate heat. Add the onion and garlic and sauté for 5 minutes or until the onion is soft. Add the bell peppers and sauté for 5 minutes or until soft. 2. Stir in the chili powder, oregano, cumin, and coriander and cook for 1 minute. 3. Add the ground turkey and sauté for 3 minutes or until no longer pink. 4. Add the tomatoes, salt and black pepper and bring to a simmer. 5. Add the beans and cook for 3 minutes or until heated through. |
