Made with ground turkey, beans, bell peppers and spices, this chili is lighter than beef or pork chili and has a nice spicy flavor. Ingredients:
1 1/2 lbs ground turkey |
2 (15 ounce) cans black beans |
2 (15 ounce) cans chopped tomatoes |
1 large carrot, diced |
1 green pepper, diced |
1 red pepper, diced |
1/2 onion, diced |
2 tablespoons olive oil |
2 tablespoons cumin |
1 teaspoon black pepper |
4 tablespoons chili powder |
2 cups beef broth |
1 cup chicken broth |
1/2 jalapeno pepper, diced |
Directions:
1. 1. Heat the olive oil in a heavy stew pot. Add the onions and saute them. When they soften and begin to turn brown, add carrot, red & green pepper. Add chicken broth as needed to keep vegetables from sticking. 2. 2. In a separate skillet, brown the ground turkey. When it is cooked through, add it to the vegetables in the stew pot. 3. 3. Add beef & chicken broth, the jalapeno, and the spices. 4. 4. Simmer on low for several hours, until liquid reduces and flavors develop. |
