Made with ground turkey, beans, bell peppers and spices, this chili is lighter than beef or pork chili and has a nice spicy flavor.
Ingredients:
1 1/2 lbs ground turkey
2 (15 ounce) cans black beans
2 (15 ounce) cans chopped tomatoes
1 large carrot, diced
1 green pepper, diced
1 red pepper, diced
1/2 onion, diced
2 tablespoons olive oil
2 tablespoons cumin
1 teaspoon black pepper
4 tablespoons chili powder
2 cups beef broth
1 cup chicken broth
1/2 jalapeno pepper, diced
Directions:
1. 1. Heat the olive oil in a heavy stew pot. Add the onions and saute them. When they soften and begin to turn brown, add carrot, red & green pepper. Add chicken broth as needed to keep vegetables from sticking.
2. 2. In a separate skillet, brown the ground turkey. When it is cooked through, add it to the vegetables in the stew pot.
3. 3. Add beef & chicken broth, the jalapeno, and the spices.
4. 4. Simmer on low for several hours, until liquid reduces and flavors develop.
