This recipe is excellent on a cool fall or winter day. I've modified it over the years and often experiment with the seasonings. Ingredients:
2 1/2 lbs lean ground turkey |
1 large sweet onion, chopped |
28 ounces crushed tomatoes |
42 ounces diced tomatoes |
15 1/2 ounces dark red kidney beans |
15 1/2 ounces red kidney beans |
15 1/2 ounces black beans |
2 green peppers, diced |
1 carrot, diced |
8 ounces fresh mushrooms, sliced |
1 tablespoon chili powder |
1 tablespoon cumin |
3 tablespoons sweet mesquite powder |
Directions:
1. Brown ground turkey in a skillet. 2. Saute peppers, onion, carrots and mushrooms until soft. Add tomatoes, beans and seasoning and heat. 3. Add turkey to vegetables and simmer for a minimum of 30 minutes . |
