This is kinda like a Ham Salad recipe. Really flexible, use only as much mayo as you want (I use Duke's), everything's in proportion so it multiplies really easy. If you don't have a food processor, just chop everything up real fine. Ingredients:
1 cup turkey, diced fine |
1/2 teaspoon olive oil |
1/8 cup onion, diced fine |
3 tablespoons mayonnaise |
1 teaspoon stone ground mustard |
1 teaspoon mustard |
1/4 teaspoon poultry seasoning |
salt |
pepper |
Directions:
1. Process the turkey with the olive oil, transfer to your mixing bowl. 2. Process the onion and add to turkey, mixing well. 3. Add mayo 1 tbsp at a time. 2 tbsp makes a sticky salad, 3 makes it creamy. I use Duke's because it's a good base that's not sweet. 4. Add mustard, poultry seasoning and salt/pepper to taste. I always have different mustards around, so I throw my favorites in there. You can use regular mustard for the whole thing or dijon, it doesn't matter. |
