breakfast casserole combined from multiple recipes in the south beach diet cookbook Ingredients:
6 ounces ground turkey breast, browned |
1/2 large onion |
5 eggs, beaten |
1 cup mushrooms, sliced |
1 cup broccoli, chopped |
1/2 cup black olives, sliced |
2 cup cheese, cheddar, 2% shredded |
1 tbsp tabasco sauce |
Directions:
1. brown ground turkey and onion in skillet with 2 tbsp olive oil. 2. in separate bowl, beat eggs, add mushrooms, broccoli, olives, tabasco sauce, salt & pepper if desired. 3. add in cooked turkey/onion mixture, then stir in 1 1/2 cups of the reduced-fat cheese. 4. grease or spray an 8 square glass baking dish. pour mixture in dish 5. bake at 350 approx. 25 minutes until knife inserted in the middle comes out clean. 6. remove from oven and top with remaining 1/2 cup of shredded reduced fat cheese. 7. Cool, cut into 6 squares, refrigerate or freeze. |
