36 ounces lean ground turkey (5186), net from 3 pounds fresh, cooked per recipe |
1 1/2 cups finely chopped red onion |
3/4 cup finely chopped parsley |
6 tbs. (plain lowfat) yogurt |
87 g (6 tbs. soft) goat cheese (1159), well chilled for crumbling, weight equivalent estimated |
2 tbs. olive oil |
herbed yogurt sauce |
2 cups (plain lowfat) yogurt |
1/4 tsp. dried tarragon or 1 tsp. fresh |
1/2 tsp. dried basil (2003) or 2 tsp. fresh |
2 tsp. minced scallions |
2 tsp. lemon juice |
Directions:
1. Preheat the oven to 350. 2. In a large mixing bowl, using your hands, mix together the turkey, onion, parsley, and yogurt. Make the mixture into twelve patties. Place the crumbled goat cheese right in the center on the top of six patties. Then place the other patties on top to create six double-thick turkey burgers. 3. Heat the oil in a large cast iron skillet over medium-high heat. Brown the patties quickly on both sides, and then transfer the skillet to the oven. Bake about 15 minutes or the juices run clear when pressing down on the burger. 4. Prepare the Herbed Yogurt Sauce by combining the yogurt, tarragon, scallions, basil, and lemon juice in a mixing bowl. Stir until well mixed and serve with the turkey burger. |
