Turkey Breasts With Mozzarella and Tomatoes |

There is something about mozzarella and tomatoes that just marry really well together, couple that with fresh basil or parsley and it's turned into something special. Ingredients:
6 tablespoons butter |
6 slices turkey breast (1/2inch thick) |
salt & freshly ground black pepper, to taste |
6 slices fresh mozzarella cheese |
3 large tomatoes, peeled and chopped |
1 bunch fresh parsley, chopped fine |
Directions:
1. Melt 2 tablespoons of butter in a large frying pan. Add turkey and fry until golden brown on both sides. 2. Season with salt and pepper. 3. Place turkey slices in a shallow baking dish in 1 layer and cover each with a slice of mozzarella cheese and some of the chopped tomatoes. 4. Dot with remaining butter and bake in a 375 degree oven for 20 minutes or until tomatoes are cooked and cheese has melted. 5. Before serving sprinkle with fresh chopped parsley. |
