An easy recipe for the crockpot. From Family Circle magazine. Ingredients:
2 1/2 lbs boneless turkey breast |
1 onion, chopped |
3 sprigs fresh cilantro |
3/4 cup low sodium chicken broth |
1/2 teaspoon kosher salt |
1/2 teaspoon fresh ground black pepper |
2 tablespoons cornstarch |
1/3 cup low-fat plain yogurt |
1/4 cup fresh cilantro, chopped |
6 cups mixed salad greens (optional) |
Directions:
1. Spray bowl of crockpot with cooking spray. 2. Place turkey breast in bottom of crockpot, top with onions, add cilantro sprigs and pour in broth; season with 1/4 teaspoon salt and 1/4 teaspoon pepper, cover. 3. Cook on HIGH for 3 hours or LOW for 5 hours. 4. Remover turkey to a cutting board; tent with foil to keep warm. 5. Strain liquid into a saucepan; discard solids. 6. In a small jar, with a tight fitting cover, add cornstarch and 3 tablespoons of the liquid in the saucepan; shake to combine. 7. Bring liquid in saucepan to a boil, over medium high heat; whisk in cornstarch mixture, continue cooking one minute (should thicken). 8. Pour sauce into a serving bowl and stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper, yogurt and chopped cilantro. 9. Slice turkey and serve with sauce and side salad, if desired. |
