Turkey Basil Summer Rolls |

From Cooking Light's 5 Ingredient, 15 Minute cookbook publication. (I can't find Thai seasoning. Ingredients:
cooking spray |
3/4 lb lean ground turkey |
1/2 teaspoon thai seasoning |
1/4 teaspoon black pepper |
1/8 teaspoon salt |
3/4 cup cabbage and carrot coleslaw mix |
6 (8 inch) round sheets rice paper |
12 basil leaves |
6 tablespoons low-fat sesame ginger salad dressing |
Directions:
1. Heat a large non-stick skillet over medium-high. Coat pan with cooking spray. Add turkey and next three ingredients to pan; cook 5-7 minutes, or until turkey is no longer pink. Combine turkey and coleslaw mix in a medium bowl. 2. Add hot water to a large, shallow dish to a depth of 1 inch. Place 1 rice paper sheet in dish; let stand 30 seconds, until just soft. Place sheet on a flat surface. 3. Arrange 2 basil leaves on top third of sheet. Arrage 1/3 cup turkey mixture on bottom third of sheet. Folding sides of sheet over filling and starting with filled side, roll up jelly-roll fashion. Gently press seam to seal. Place roll, seam side down, on a serving platter, and cover with a damp towel. 4. Repeat procedure with remaining sheets, basil, and turkey. 5. Slice each roll in half diagonally. Serve with sesame-ginger dressing. |
