3/4 pound freshly ground raw turkey breast |
1 medium onion, chopped |
1 (8-ounce) can no-salt-added tomato sauce |
1 (7-ounce) jar roasted red peppers, drained and chopped |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 teaspoons liquid mesquite smoke (optional) |
4 (2.25-ounce) whole wheat or plain kaiser rolls |
Directions:
1. Cook turkey and chopped onion in a nonstick skillet over medium-high heat 4 to 5 minutes or until onion is tender and turkey is done, stirring until turkey crumbles. Stir in tomato sauce and red peppers; simmer 5 minutes. 2. Stir in salt, pepper, and, if desired, liquid smoke. Spoon turkey mixture evenly onto bottom halves of rolls, and top with remaining roll halves. |
