Turkey Bacon and Veggie Frittata

Frittatas are a quick and easy meal for anytime of the day.
Ingredients:
4 eggs
1/2 cup bell pepper
1/2 cup onions
1/2 cup mushroom
2 cloves of garlic
2 cups spinach
3 slices turkey bacon
1 teaspoon extra virgin olive oil
4 tablespoons of parmesan cheese
Directions:
1. cook turkey bacon, then remove from pan. Chop into pieces.
2. In a bowl, beat eggs together. sauté onions,garlic,mushroom and bell peppers in olive oil until soft. Add spinach and cook until wilted. stir in bacon. Pour eggs over the vegetable,bacon mixture and let the eggs cook on low heat for about 12 minutes. Sprinkle cheese on top and broil in the oven for about 2 minutes.
