Turkey and Wild Rice Soup |

Ingredients:
1 tablespoon(s) vegetable oil |
1 cup(s) finely chopped carrots |
1 cup(s) finely chopped onions |
1/2 cup(s) finely chopped celery |
2 clove(s) garlic, minced |
2 cup(s) chopped cooked turkey |
2 cup(s) cooked wild rice |
1 quart(s) turkey broth or 2 14.5-ounce cans chicken broth |
1/4 teaspoon(s) salt |
1/4 teaspoon(s) ground black pepper |
2 cup(s) whipping cream |
2 tablespoon(s) dry sherry |
Directions:
1. Heat oil in large saucepan on medium-high heat. Add carrots, onions, celery and garlic. Cook and stir 5 minutes, or until vegetables are tender. 2. Stir in turkey, rice, broth, salt and pepper. Cook 10 minutes, stirring occasionally. 3. Add cream and sherry. Cook until heated through, stirring occasionally. Ladle soup into serving bowls. |
