Another nice and refreshing salad that I like to make and bring in my lunch. It's especially good in the summer when you don't want to heat up the house. This is also good with chicken. Enjoy
Ingredients:
1-1/2 cups cooked turkey or chicken in chunks or shreds
1 head romaine lettuce
4 stalks celery sliced
1 cup shelled peanuts or almonds
40 red grapes whole or in half
1/4 cup italian dressing
1/4 cup mayonnaise
2 tablespoons red wine vinegar
Directions:
1. Put torn lettuce and celery slices in large salad bowl then add dressing and toss to mix.
2. Put cooked turkey or chicken in smaller bowl then season with salt and pepper to taste.
3. Add mayonnaise and vinegar then toss to mix well.
4. Add grapes and nuts then toss again to mix.
5. Top romaine lettuce with turkey mix and serve immediately.
