Ingredients:
6 cups water |
3/4 cup wild rice, uncooked |
1/2 cup pearl barley, uncooked |
1/2 pound smoked turkey breast, diced |
2 cups diced red delicious apple |
3/4 cup sliced green onions |
3/4 cup diced celery |
1/4 cup plus 1 tablespoon cider vinegar |
1/4 cup frozen apple juice concentrate, thawed and undiluted |
1 tablespoon olive oil |
1 tablespoon dijon mustard |
1 teaspoon dried thyme |
1/2 teaspoon freshly ground pepper |
12 red leaf lettuce leaves |
Directions:
1. Combine water, wild rice, and barley in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes or until rice and barley are tender. Drain. Add turkey and next 3 ingredients; toss well. 2. Combine vinegar and next 5 ingredients. Pour over rice mixture; toss well. Cover and chill 3 hours, stirring occasionally. 3. To serve, place 2 lettuce leaves on each of 6 plates. Spoon rice mixture over lettuce. |
