Turkey and Gorgonzola Salad |

Prep: 18 minutes. Ingredients:
8 ounces deli-style turkey, cubed |
1 gala apple, cored and thinly sliced |
1/2 cup chopped red onion |
1 (5-ounce) package spring greens salad mix |
1/4 cup pecans, toasted |
1/3 cup (1.3 ounces) crumbled gorgonzola cheese |
1/4 teaspoon freshly ground black pepper |
1/2 cup frozen apple juice concentrate, thawed |
1/4 cup balsamic vinegar |
1 1/2 teaspoons dark sesame oil |
Directions:
1. Combine first 3 ingredients in a medium bowl; toss well. 2. Place 1 1/2 cups spring greens on each of 4 plates. Top evenly with turkey mixture; sprinkle with pecans, cheese, and pepper. 3. Combine apple juice concentrate, vinegar, and oil; stir well with a whisk. Spoon about 3 tablespoons dressing over each serving. |
