A way to use leftover turkey after Thanksgiving. Ingredients:
8 ounces sugar snap peas, trimmed and halved |
2 cups leftover roast turkey, pulled into bite-sized pieces |
4 cups baby spinach leaves |
4 cups mixed salad greens |
2 cups sliced mushrooms |
1 (15 ounce) can mandarin oranges, drained |
1/2 cup walnut halves |
1/2 cup raspberry vinaigrette salad dressing |
Directions:
1. Toss snap peas, turkey meat, spinach leaves, mixed salad greens, mushrooms, mandarin orange pieces, walnuts, and raspberry vinaigrette dressing lightly in a salad bowl to combine, and serve. |
