Ingredients:
1 1/2 teaspoons extra-virgin olive oil |
1 tablespoon balsamic vinegar |
1 teaspoon dijon mustard |
1/8 teaspoon salt |
1/8 teaspoon pepper |
2 cups arugula |
3 slices deli turkey |
2 tablespoons dried cranberries |
1 tablespoon chopped pistachios |
1 4-inch whole-wheat pita |
Directions:
1. Whisk olive oil, balsamic vinegar, Dijon mustard, salt and pepper; toss with arugula. Divide salad atop turkey slices. Sprinkle each with dried cranberries and chopped pistachios. Roll up turkey; stuff into pita. |
