From The North African Kitchen Ingredients:
4 small cucumbers, peeld and diced |
1 small red onion, peeled and diced |
3 tomatoes, diced |
3 green peppers, cored, seeded and diced |
2 apples, peeled, cored and chopped |
1 lemon, juice of |
1 tablespoon dried mint |
1 small black olives |
fresh mint leaves |
Directions:
1. Mix together all the chopped vegetables and apples in a large salad bowel. 2. Add lemon juice and sprinkle with the dried mint. 3. Salt to taste. 4. Dress with olives and fresh mint leaves. 5. Serve immediately. |
