Ingredients:
2 granny smith apples |
2 cucumbers |
2 tomatoes |
1 bell pepper |
1/2 purple onion |
2 lemons, juice of |
1/8 cup tarragon vinegar |
1/4 cup olive oil, scant |
1 teaspoon salt |
1 -2 tablespoon mint, finely ground |
Directions:
1. Peel and chop apples and vegetables very fine. 2. Mix dressing and pour over salad. 3. Let stand at least 2 hours before serving. |
