You can substitute other fish, such as, halibut, swordfish, or salmon, if you are not a fan of tuna. Try to use fresh ingredients as the flavour is greatly enhanced. A really quick meal with an Italian flair. Ingredients:
3 garlic cloves, chopped |
1 bunch long green onion, chopped |
4 tablespoons extra virgin olive oil, divided |
1 (15 ounce) can diced tomatoes |
1/2 teaspoon ground sage |
1 (15 ounce) can cannellini beans, rinsed and drained |
4 tuna steaks (fresh or frozen) |
1/2 cup fresh lemon juice |
1/2 teaspoon fresh ground black pepper |
1/4 cup fresh parsley |
Directions:
1. In a large skillet sauté the garlic and onions in 2 Tbls of olive oil for 3 minutes. 2. Add the tomatoes and sage and simmer for 5 minutes. 3. Stir in the beans and cook for another 3 minutes. 4. Rinse the fish and pat dry. 5. Brush with the remaining olive oil and lemon juice. 6. Season both sides with pepper. 7. Place the fish on a broiling pan and broil for about 3 minutes on each side. 8. Spoon the beans and tomato mixture onto a plate and top with the fish steaks. 9. Serve with extra lemon and garnish with parsley. |
