Tuna is a great source of omega-3 fatty acids, which have been found to protect against heart disease. From the American Diabetes Association. tuna steaks, olive oil, onion, canned diced tomatoes, Kalamata olives, fresh oregano or dried oregano, packet sugar substitute, ground black pepper cvt Ingredients:
12 ounces cooked tuna, net from 1 pound fresh tuna steaks |
1 tsp olive oil |
1 large onion, thinly sliced (about 1 1/2 cups) |
14 1/2 ounces (canned no-salt-added) diced tomatoes with juice |
67 g (1/2 cup) kalamata olives, pitted and chopped |
1 tablespoon dried oregano or 2 tbsp chopped fresh oregano |
1 g (1 packet) equal or splenda |
1/4 tsp ground black pepper |
Directions:
1. Coat a large sauté pan with cooking spray. Over medium-high heat, sear tuna on each side about 2 minutes. Remove from pan. 2. Add olive oil to pan. Add onion and cook for about 5 minutes or until beginning to brown. Reduce heat to low. Add tomatoes, olives, and oregano and simmer for another 3 minutes. Mix in sugar substitute and black pepper. 3. Add tuna back to mixture, cover, and cook 3 more minutes. |
