Tuna White Bean And Tomato Salad |

I got the recipe idea form Pat2me ( a member here) and I adapted it just a little to make a full course meal, if using as a side it would probably feed more but this is dinner for 1 as I see it!! Ingredients:
1 tbsp extra virgin olive oil |
1 1/2 tsp red wine vinegar |
salt and pepper, to taste |
1 can cannellini beans |
1 can tune, drained |
1 medium heirloom tomato, chopped |
1 bunch basil, chiffonade |
Directions:
1. In a medium bowl, combine oil, vinegar, salt and pepper; blend well 2. Add the beans, tuna, tomato, and basil; gently stir 3. Cover and chill for 1 hour 4. Good when eaten with a side of crusty bread to help sop up the juices |
