Very quick spread that tastes great on a slice of fresh/toasted bread. No, it’s not a tuna salad, yes, its better. Ingredients:
2 cans of tuna in water (5 oz, 140gr a can) |
2 tbsp. of lite sour cream |
1 tbsp. of lite mayo |
1 small onion |
3 scallions |
1/2 cup of chopped celery |
zest from one lemon |
1 tbsp. of lemon juice |
1 tbsp. of salt |
1 tbsp. of black pepper |
1 cup of roasted walnuts |
fresh basil (for the toast) |
Directions:
1. Chop the onions and scallion to 1-inch pieces and puree together in a food processor, together with all other ingredients except for the walnuts. I like to leave small chunks of walnuts so once the texture becomes a paste, I add the walnuts and pulse the food processor for 3-4 times. 2. I toast a slice of bread, scope some of the tuna walnut spread on it and finish with a leaf of fresh basil on top. Chilled glass of white wine and…. its perfect. Enjoy. |
