Ingredients:
1 (6-ounce) can albacore tuna in water, drained |
2 tablespoons chopped onion |
1 celery rib, chopped |
1/4 red or green bell pepper, chopped |
1/2 cup shredded carrot |
3 tablespoons light mayonnaise |
2 teaspoons lemon juice |
1/2 teaspoon grated lemon rind |
1/4 teaspoon salt |
1/4 teaspoon pepper |
4 (6 1/2-inch) whole wheat pita rounds |
lettuce leaves |
toppings: shredded carrot, tomato slices (optional) |
Directions:
1. Stir together first 10 ingredients. 2. Cut a pocket into each pita round. Line with lettuce. Spoon 1/2 cup tuna mixture into pitas. Top with carrot and tomato slices, if desired. |
