TUNA STUFFED EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tigris Estate in Dallas, Texas in 1984.
Ingredients:
4 large eggs hard boiled
1/4 cup drained canned oil packed tuna
3 tablespoons softened butter
1 tablespoon freshly grated parmesan cheese
1 pinch grated nutmeg
1 tablespoon finely chopped parsley
Directions:
1. Cut eggs in half lengthwise then place yolk in medium bowl and arrange whites on a plate.
2. Add tuna to egg yolks and mash with wooden spoon.
3. Beat in butter, cheese and nutmeg then stir in parsley then spoon mixture into egg whites.
4. Cover and chill at least 1 hour before serving.
