This is an Oh so easy way to have fresh sauce for dinner, even if you are just coming in the door from work! This is my adaptation of my Italian mother-in-law's sauce that she loved to cook all day. Makes a wonderful Lenten dinner!!
Ingredients:
2 tablespoons olive oil
1 large yellow onion
1/2 cup fresh parsley, chopped
1/2 cup fresh basil, chopped
3 garlic cloves (sliced or minced)
salt and pepper
2 (6 ounce) cans tuna in water, drained
2 (29 ounce) cans crushed tomatoes (i prefer to use redpack brand)
Directions:
1. Chop onion and sauté in oil.
2. Add parsley, basil, garlic, salt and pepper.
3. Add tuna, and simmer for about 5 minutes.
4. Add tomatoes, juice and all, If you don't care for the consistency of these tomatoes, you can puree them in the food processor or use tomato puree instead Simmer 20 minutes.
5. Pour over pasta.
