Tuna Salad With Chilli Basil Pesto |

A different take on tuna salad. Very simple to prepare and delicious. Ingredients:
4 tuna steaks |
olive oil |
salt & freshly ground black pepper |
80 g fresh rocket |
80 g fresh spinach leaves |
4 tomatoes, cut into wedges |
1 garlic clove, crushed |
1/2 cup shaved parmesan cheese (optional) |
2 red chilies, deseeded and chopped |
1/3 cup pine nuts |
1 1/2 cups fresh basil |
1/2 cup olive oil |
salt and pepper |
Directions:
1. To make pesto:. 2. Place chilli, garlic, parmesan, pine nuts and basil in processor, process until combined. 3. Slowly add olive oil until pureed. 4. Transfer to bowl and season. Set aside. 5. To cook tuna:. 6. Brush with oil and season. 7. Grill to you liking. 8. Cut tuna into chunks, add to other salad ingredients, season and top with pesto. 9. Serve immediately. |
