This is a healthy version of chicken quesadilas. I also think it is easier and more tasty! You can change it up a bit by adding different peppers, spinach, tomatoes, etcetera! Enjoy! Ingredients:
1 (4 ounce) package starkist sweet and spicy tuna |
2 green onions, chopped |
1 cup mexican blend shredded cheese (save a little for later) |
1/2 cup green bell pepper |
1 large tortilla, i prefer the whole wheat kind |
salsa (optional) |
Directions:
1. Mix all ingredients in bowl except tortillia. 2. Spray skillet with non-stick spray. 3. Place tortilla in skillet, sprinkle one half with left over chese. 4. Spoon mixture on top of cheese and before folding tortilla in half (moon shape) add the rest of cheese on top (the cheese acts as a glue for the quesadilia). 5. Grill/warm for 5 minutes and flip. 6. Enjoy and dip in salsa! |
