Tuna Pasta Salad A' L'oriental |

A hot-weather favorite around here-perfect for a light lunch with a bunch of grapes! To fancy it up a bit, use leftover seared ahi tuna. Ingredients:
1 cup curly pasta |
1 cup tuna, lightly broken up with fork |
1 cup snow peas, chopped into 1-inch pieces or 1 cup frozen green pea |
1/2 cup green onion, chopped |
1/2 cup mayonnaise |
3 tablespoons soy sauce |
2 tablespoons sherry wine |
1 teaspoon gingerroot, grated |
fresh ground black pepper |
chopped cashews or peanuts, for topping |
Directions:
1. Cook pasta in boiling water until al dente; drain, cool. 2. Mix remaining ingredients and toss with pasta. Let chill for 1 hour in fridge. 3. Top with chopped cashews or peanuts just before serving. |
