Tuna Pasta Fritters With Salsa |

Another great find from Greenseas.Great served with a lovely crisp green salad! Ingredients:
1/2 cup small shell pasta, shapes |
425 g tuna in water, drained |
1 medium zucchini, grated and drained |
1 cup flour |
2 eggs |
1/2 cup milk |
1/4 cup chopped chives |
2 large mint leaves, finely chopped |
2 tablespoons olive oil |
2 ripe tomatoes, finely chopped |
1 tablespoon red onion, finely sliced and chopped |
1 tablespoon olive oil |
2 teaspoons white wine vinegar |
1 tablespoon mint leaf, sliced for decoration |
Directions:
1. Cook pasta in a saucepan of boiling water for 10 minutes, or according to instructions on packet. Drain and rinse pasta under cold water. 2. Combine pasta with the tuna, zucchini, flour, eggs, milk chives and mint leaves. 3. Mix well and season to taste. 4. Heat oil in a pre-heated frying pan and drop in tablespoons of mixture. Cook both sides for 3-4 minutes or until golden. 5. Remove to a paper towel lined plate and keep warm. 6. Combine tomato salsa ingredients and serve over patties. |
