Tuna Mornay With Macaroni |

My now 6 year old is still a very fussy eater. This dish uses almost the same ingredients as my tuna fand corn ritters Tuna and Corn Fritters - and has all the food groups represented. I always have canned tuna and creamed corn on hand for either dish. Ingredients:
100 g tuna in water, drained |
100 g creamed corn (or corn kernnels chopped up finely) |
1/3 small onion, diced |
1 tablespoon butter |
1 tablespoon plain flour |
50 g grated cheddar cheese |
1/2 cup milk |
1 cup macaroni |
Directions:
1. Heat a small saucepan and add the butter. Cook until melted, add the onion and cook 4 minutes until the onion is translucent. Add the flour and stir through, then add half the milk and cook until the sauce is thickended. (I sometimes use a whisk at this point to get rid of any lumps in the mixture, but this isn't really necessary). 2. Add the remaining milk, cheese, tuna and corn. Cook a further 5 minutes on a low heat, stirring every couple of minutes to prevent mixture from burning. 3. Cook the macaroni as per the packet instructions, and top with the tuna mixture. |
