Ingredients:
1/3 cup chopped celery
3 tablespoons light mayonnaise
2 tablespoons dijon mustard
2 teaspoons lime juice
1/2 teaspoon coarsely ground black pepper
1 (12-ounce) can solid white tuna in water, drained
4 english muffins, split and toasted
8 (1/4-inch-thick) slices tomato
1/2 cup (2 ounces) shredded reduced-fat swiss cheese
Directions:
1. Preheat broiler.
2. Combine first 6 ingredients. Spread 3 tablespoons tuna mixture onto each muffin half. Top each with 1 tomato slice and 1 tablespoon cheese. Broil 5 minutes or until cheese melts.
