This recipe is from Favorite Recipes of Assemblies of God Woman Meats. Found in Alvera Wise's (my mother-in law) kitchen. I really like this recipe and so easy. I have doubled this and poured it into a standard loaf pan, so I can slice it for sandwiches etc. Ingredients:
2 (6 1/2 ounce) cans chunk tuna, water packed |
2 eggs |
1 small onion, chopped |
1 large celery, stalk, chopped |
1 1/2 cups crackers, coarsely crushed saltine |
1/4 teaspoon celery seed |
1 tablespoon parsley, chopped |
2/3 cup water or 2/3 cup milk |
1/8 teaspoon pepper |
Directions:
1. Break apart tuna with a fork in a mixing bowl; add remaining ingredients. 2. Mix well; pour into well greased 1-quart casserole. 3. Cover. 4. Bake in 350 degree oven for 40 minutes. 5. Uncover; bake for about 20 minutes more or until golden. 6. Serve with lemon, mushroom sauce,or a tarter sauce. |
