This light, delicious pasta dish was featured on Canadian Living Cooks . It is ready in half an hour if you make the sauce while the pasta cooks. Ingredients:
2 tablespoons olive oil |
1 small onion, chopped |
4 garlic cloves, minced |
1/2 teaspoon dried italian seasoning |
1/4 teaspoon hot pepper flakes |
10 ounces frozen spinach, thawed, squeezed dry and chopped |
28 ounces stewed tomatoes |
1/4 cup oil-cured olives, pitted and chopped |
2 tablespoons capers, rinsed and drained |
15 ounces tuna, drained and broken into chunks |
12 ounces spaghetti |
parmesan cheese, grated (optional) |
Directions:
1. In a large skillet, heat the oil over medium heat. 2. Cook the onion, garlic, Italian seasoning and hot pepper flakes for 5 minutes or until softened. 3. Add the spinach and tomatoes, breaking up the tomatoes with the back of a spoon. 4. Add the olives and capers and bring to a boil. 5. Reduce the heat and simmer for about 10 minutes or until thickened. 6. Stir in the tuna. 7. Meanwhile, in a large pot of boiling salted water, cook the pasta for 8 to 10 minutes or until tender but firm. 8. Drain and return to the pot. 9. Add the sauce and toss to coat. 10. Serve sprinkled with cheese (if using). |
