This is a kind of twist on regular jambalaya. It's really delicious and easy to prepare. Ingredients:
1med. to lg. onion, chopped |
1 green bell pepper, chopped |
1 rib celery, chopped |
1 to 2 garlic cloves, minced |
1 stick butter |
1 can ( 16 oz.) tomatoes |
1 can (14 oz.) beef broth |
1/2 can water |
1 cup raw rice |
1 to 2 cans (6 1/2 oz. each) tuna, drained |
1/2 tsp. pepper |
1/4 tsp. salt |
1 cup frozen okra (optional) |
Directions:
1. Saute onion, bell pepper, celery, and garlic in butter. 2. Combine tomatoes, okra (if using), broth, and water. 3. Add to vegetables in step 1 and bring to a boil. 4. Add rice, tuna, salt and pepper to boiling liquid. 5. Cover and simmer until rice is cooked (about 15-20 minutes). |
