Tuna Jambalaya

This is a kind of twist on regular jambalaya. It's really delicious and easy to prepare.
Ingredients:
1med. to lg. onion, chopped
1 green bell pepper, chopped
1 rib celery, chopped
1 to 2 garlic cloves, minced
1 stick butter
1 can ( 16 oz.) tomatoes
1 can (14 oz.) beef broth
1/2 can water
1 cup raw rice
1 to 2 cans (6 1/2 oz. each) tuna, drained
1/2 tsp. pepper
1/4 tsp. salt
1 cup frozen okra (optional)
Directions:
1. Saute onion, bell pepper, celery, and garlic in butter.
2. Combine tomatoes, okra (if using), broth, and water.
3. Add to vegetables in step 1 and bring to a boil.
4. Add rice, tuna, salt and pepper to boiling liquid.
5. Cover and simmer until rice is cooked (about 15-20 minutes).
