Special and good for lunch! PITA stuffed with Albacore tuna, avocado, lemon juice, pecans, and mayonaise. Mild, but exceptionally flavorful. Oh so good!! Ingredients:
1 package albacore tuna in water |
1 avocado |
1/2 lemon squeezed |
about 1/2 cup coarsely chopped pecans |
quality mayonaise to mix |
black pepper |
1 or 2 shakes hot sauce is optional |
good fresh pita bread |
Directions:
1. Empty package of tuna into bowl 2. Add lemon juice from 1/2 lemon 3. Add 1/2 cup pecans 4. Add enough mayonaise to moisten 5. If you add hot sauce, add now 6. Add avocado slices 7. Mix carefully 8. Fill pita pockets 9. NOTE: May add layer lettuce, fresh spinach, tomatoes, green onions, etc. in pocket also. 10. ENJOY |
