Tuna Green Bean Casserole |

This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Ingredients:
2 cups drained cooked green beans |
2 medium tomatoes sliced |
1 can tuna drained |
1 small onion chopped |
1/2 stick butter |
1/3 cup flour |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
3/4 teaspoon dried thyme leaves |
3/4 cup milk |
1 cup cottage cheese sieved |
1/4 cup sliced pimiento stuffed olives |
1/2 cup grated swiss cheese |
Directions:
1. In a buttered casserole alternate layers of green beans, tomato slices and flaked tuna. 2. Cook onion in butter about 5 minutes then stir in flour and seasonings. 3. Gradually add milk then cook until thickened. 4. Add cottage cheese and stuffed olives then pour over vegetables and tuna. 5. Sprinkle cheese on top then bake at 350 for 30 minutes. |
