From a Starkist tuna cookbook... Fritatta is simply a fancy name for an open-faced omelet. 282 calories per serving -This is in the front of my 'to try' recipes. Ingredients:
1 cup thinly sliced zucchini |
1/2 cup thinly sliced onion |
2 tbls vegetable oil |
5 extra-large eggs |
1/4 cup low-fat milk |
1 can (3 1/4 ounces) starkist tuna, drained and flaked |
1/2 tsp salt |
1/4 tsp pepper |
1/2 cup shredded swiss or monterey jack cheese |
Directions:
1. In a large ovenproof skillet saute zucchini and onion in oil for 3 minutes, or until vegetables are limp. 2. In a medium bowl beat eggs lightly with milk. 3. Stir in tuna, salt and pepper. 4. Preheat broiler. 5. Pour egg mixture over sauteed vegetables; reduce heat to medium. 6. Cook, convered, for 5 to 8 minutes, or until set. 7. Uncover frittata; sprinkle cheese over top. 8. Place frittata under broiler until cheese is melted. 9. cut into quarters to serve. |
