Tuna, Cucumber, and Dill Sandwiches |

The tuna mixture can be made ahead, covered, and chilled until ready to make into sandwiches. Ingredients:
1 (6-ounce) can albacore tuna in water, drained and flaked |
2 tablespoons low-fat mayonnaise (such as hellman's) |
2 tablespoons reduced-fat sour cream |
2 teaspoons tarragon vinegar |
3/4 teaspoon dried dill |
1/8 teaspoon salt |
1/8 teaspoon pepper |
4 (1-ounce) slices whole wheat bread, toasted |
1/3 cup thinly sliced peeled cucumber |
Directions:
1. Combine first 7 ingredients in a small bowl. 2. Spread half of tuna mixture on 2 slices of bread. Arrange cucumber slices over tuna mixture. Top with remaining bread slices. Cut sandwiches in half, using a serrated knife. |
