tuna and potatoes in a pan-fried croquette Ingredients:
3 cans tuna, drained |
1/2 onion, finely chopped |
1 1/2 t garlic, minced |
3 potatoes, cooked and chopped (skin included) |
2 t mayonnaise or spicy mayonnaise |
1 t mustard, spicy brown |
2 t lime juice |
1 egg, large |
2 t pepper |
2 t garlic powder |
2 t paprika |
2 t olive oil for pan-frying |
Directions:
1. Saute' onions and garlic antil transparent in a nonstick pan that has been sprayed with pan spray. 2. Mash and mix everything together thoroughly in a bowl. 3. Form mixture into small log shapes. 4. Pan-fry in a bit of oil until browned all around. You will not need all of the oil at once. You can save a bit more fat if you use a nonstick pan and some pan spray, but they will not have quite as nice a texture. |
