A quick and handy main dish soup. I add an extra can of tuna and more clam juice. Ingredients:
3 tablespoons butter or 3 tablespoons margarine |
1/2 cup diced celery |
1/2 cup diced onion |
3/4 cup diced carrot |
3 tablespoons flour |
1 teaspoon dried thyme |
1 (17 ounce) can cream-style corn |
2 cups milk |
1 (7 ounce) can light tuna, drained |
1 cup bottled clam juice or 1 cup chicken broth |
salt and pepper |
Directions:
1. Melt butter in a medium saucepan, add celery, onion and carrots. 2. Saute over medium high heat for 5 minutes. 3. Reduce heat to low, add flour and thyme, cook and stir 2 minutes. 4. Add corn, milk, tuna and clam juice, increase heat to medium high stirring constantly until mixture reaches a simmer. 5. Reduce heat to low, add salt and pepper, and gently simmer until vegetables are tender, adding more milk or clam juice if necessary. |
