Tuna Burgers

Kids love to make and eat these. A change from tuna salad. Perfect for lunch box.
Ingredients:
1 (6 ounce) can tuna in water, drained
1 (6 ounce) can tuna in vegetable oil, drained
1 cup mashed potatoes (instant or fresh)
2 eggs
1/2 teaspoon parsley flakes
salt and pepper
Directions:
1. Drain and flake tuna and put in mixing bowl.
2. Add mashed potatoes, spices and eggs.
3. Mix well.
4. Form into patties and place on a baking sheet covered in baking paper and sprayed with non-stick spray.
5. Bake at 350 for 15-20 minutes, turning patties halfway through the time.
6. Serve on buns with lettuce, tomato and mayo.
7. I usually make this with leftover mashed potatoes or make a huge batch and serve them on the side.
