This is a fresh, summery salad with lots of protein and very little fat. It's great served over lettuce or as a side dish at a potluck. Ingredients:
2 (6 ounce) cans albacore tuna, drained |
1 (16 ounce) can garbanzo beans or 1 (16 ounce) can white beans, drained and rinsed |
2 tomatoes (preferably roma or heirloom) |
1/2 lemon |
1 shallot, thinly sliced |
1 garlic clove, minced |
3 tablespoons olive oil |
1 teaspoon cumin |
pepper |
Directions:
1. In a medium bowl, add the tuna and beans but do not mix. 2. Coarsely chop the tomatoes, discarding the seeds. 3. Add the tomatoes, juice from the lemon half, shallot, garlic, olive oil, cumin, and pepper to the tuna and beans, mixing with a rubber spatula to keep the tuna in good-sized chunks. 4. Chill and enjoy! |
