Tuna, Bacon, and Veggie Salad |

If your tired of regular tunafish, give this recipe a try.Cooking time doesn't include boiling the eggs or frying the bacon. Cook time is really the time it needs to chill.If you like you can place 1/8 cup of french- fried onions on top of each serving. This can be used for either lunch or a light dinner.Submitted to ZAAR on June10th,2008 Ingredients:
1 (6 ounce) can albacore tuna, packed in water and drained |
4 slices bacon, cooked crisp and crumbled |
2 hard-boiled eggs |
1/4 cup mayonnaise |
1/2 teaspoon ground black pepper (to taste) |
1/2 teaspoon salt |
1/3 cup diced tomato, lightly packed |
1/3 cup frozen peas, thawed |
4 lettuce leaves (optional) |
Directions:
1. Combine first six ingredients and chill for at least 2 hours. 2. Add peas and tomatoes,chill for another 30 minutes. 3. Then if using lettuce, place 2 leaves on two small plates. 4. Divide tuna salad evenly over lettuce leaves. 5. If using french fried onions,place 1/8 cup over each mound of tuna. 6. Enjoy :). |
