Real mayo can't be beat, but I can use less. I invented this apple/tuna salad for box lunches, and it's still a favorite with my (grown now) kids. Ingredients:
12 oz tuna, solid white albacore |
2 t celery |
1 t dill pickle |
1 t mustard, prepared dijon |
2 tablespoons mayonnaise |
8 slices bread, whole wheat |
Directions:
1. Drain tuna and flake with fork. 2. chop veggies, place in food processer 3. add drained tuna and pulse until mixed 4. Add mayo, mustard and pulse again 5. spread on 4 slices of wheat bread, cover with remaining bread 6. ta-da |
