Tuna and White Bean Salad (Volumetrics) |

Light, flavorful, slightly tart. Use any white bean you prefer, or any black olives you have on hand. From The Volumetrics Eating Plan. Ingredients:
3 tablespoons lemon juice |
2 tablespoons water |
1 tablespoon olive oil |
1 teaspoon minced garlic |
1 teaspoon dijon mustard |
1/2 teaspoon salt |
fresh ground black pepper |
1 cup canned cannellini beans, drained and rinsed |
1/2 cup chopped red onion |
1/4 cup pitted chopped nicoise olive |
2 cups peeled seeded, and diced tomatoes |
3 cups baby spinach |
1 (12 ounce) can solid white tuna, drained and flaked |
Directions:
1. Whisk the lemon juice through the pepper in a large bowl. Add the rest of the ingredients to the bowl and toss to coat with dressing. |
